This Winter in Florida has been unusually cold, wet and dreary. Sunday the forecast was perfect! We were so excited to see blue skies and lots of sunshine on our favorite day off! Mike & I took the girls out for breakfast and then to the new park in Sarasota!
The new park in Sarasota is very cool. They have separate playgrounds for all ages. Mike, Maddy & Mikayla enjoyed this contraption on the 10 and up playground.
Not only was Sunday a beautiful day for the park but it was also the day of the Gold Medal Olympic Hockey game between Team USA and Team Canada. Mike & I wanted to make something fun and easy for dinner to enjoy with the game. We hadn't had crab legs in forever and it was just our luck that one of our local grocery stores had them on sale for $3.99 lb. Yum! Yum!
And what would steamed crab legs be without steamed veggies and potatoes? This was a hodge podge of leftover contents in my crisper: potatoes, broccoli, cauliflower, carrots, red pepper and red onion. I wrapped this medley in foil with a dab of butter, a drizzle of olive oil and some seasonings and baked it for 25 minutes. Oh BTW... I did cook the potatoes in the microwave for 5 minutes before I diced them up, so they were nice and soft just like the veggies.
I also had a dozen shrimp in my freezer. Hardly enough to make a meal by themselves but a tasty addition to the crab legs & veggies. I wrapped them in foil with butter, lemon and some seasonings and baked them for about 10 minutes. Dinner doesn't get much easier than this! Everything was delicious, even my girls agreed! I'm happy too, this meal for four would have cost at least $60 in a restaurant, at home it cost $20! What a deal!
Unfortunately, Team USA lost the Gold Medal to Canada but Silver isn't so bad. Our goalie Ryan Miller did get MVP and at least we didn't loose the Gold to Sweden or Russia. At least we lost it to our closest neighbor and friend! Good game Canada!
So that was our Sunday Fun-Day! Sunshine, yummy foods, Gold Medal Hockey & family!

Mmmm, looks delish! And that park looked like fun; I want to play on whatever Maddy was playing on too!
