May the road rise to meet you, May the wind be always at your back, May the sun shine warm upon your face, And the rains fall soft upon your fields, And until we meet again, May God hold you in the palm of His hand.
On St. Patrick's Day everyone is Irish! But for those of us who are Irish it's the perfect opportunity to celebrate our ancestry! As a Granddaughter of a Copp, Mac Nichol, a Tait and a Shaw. I feel it's my duty to continue certain cultural traditions or at least start new ones. Mike and I are both Irish, but unlike Mike, I am also English and Scottish. All of my ancestries blend and intertwine. Bagpipes and Riverdance bring me to tears and I could live on potatoes. I guess it's in my blood!
It's no secret that I like to make every holiday fun for my girls and it wouldn't be a holiday in our house if I didn't put up a couple decorations. I picked up a banner, paper plates and some window clings from the Dollar Tree, the beads we already had. The gold coins are from the leprechaun that stopped by! I guess the leprechaun was feeling mischievous when he stopped by Madelyn's school because he ransacked her classroom and left his footprints and glitter all over the place. That silly leprechaun! Good thing he didn't do that here at our house! :)
Mikayla would rather eat her blanket than her breakfast.
Maddy had a big day! Not only was it St. Patrick's Day but she also had a visit from the Tooth Fairy!
My homemade shepherd's pie!
No corned beef and cabbage in this house! Mike doesn't like cabbage. I don't like corned beef. My girls don't like either one so we chose an alternative. Shepherd's pie is a traditional Irish dish that I have been making for years and that the whole family already enjoys so I knew it would hit the spot!
And let's not forget the Irish soda bread! I wanted to bake my own from scratch but I just didn't have the time. Luckily, the Publix Bakery has a tasty recipe! I also picked up green food coloring for the girls' Sprites and lime sherbet with sprinkles for dessert! Wednesday is our busiest day of the week, so I was happy that our festive dinner came together so nicely and easily! I even had plenty of time to read the girls a bedtime story about what else... leprechauns!!! Happy St. Patrick's Day! May the luck of the Irish be with you all! Here's one last blessing...
